Blue Ribbon Apple Pie

Blue Ribbon Apple Pie

1 recipe pastry for a 9 inch double crust pie
1 egg white, whisked
1/2 cup unsalted butter
3 tablespoons all-purpose flour
1/4 cup water
1/2 cup white sugar
1/2 cup packed brown sugar
1 tsp. cinnamon
Dash of nutmeg
1 tsp. vanilla


8 Granny Smith apples - peeled, cored and sliced

Preheat oven to 350 degrees F. Melt the butter in a saucepan. Stir in flour to form a paste. Add water, white sugar, brown sugar, cinnamon, vanilla, and nutmeg and bring to a boil. Reduce temperature and let simmer.

Place the bottom crust in your pan and brush with egg white. Mix apples with 2/3rds of sugar and cinnamon syrup. Fill crust with coated apples, mounding slightly. Cover with a lattice work of crust. Gently pour remaining syrup over crust.

Bake at 350 degrees F for 45-55 minutes, until apples are soft.
